This style of shōjin-ryōri (ascetic cuisine) has been preserved on Mt. Haguro for centuries and is still served today at Saikan.
It is said that this very cuisine was offered to the renowned poet Matsuo Bashō when he visited the Dewa Sanzan during the journey described in The Narrow Road to the Deep North.
Prepared with seasonal mountain vegetables and bamboo shoots gathered from the foothills of the Dewa Sanzan, these dishes follow Haguro’s distinctive culinary traditions, carefully handed down through generations.
Enjoying this meal in the quiet, sacred atmosphere of Saikan offers a uniquely spiritual and memorable dining experience.

The shōjin-ryōri at Saikan is not vegan by default, as some dishes contain bonito stock (especially miso-based dishes). If you require vegan arrangements, please contact us in advance.
